Achari Gobhi is a north Indian dish where the cauliflower is sautéed along with roasted and ground spices. This is a dry but very healthy vegetable recipe that tastes great when paired with dal and steamed rice.

 

Since it is a straightforward and easy recipe, Achari Gobhi is very easy to cook, provided that the spices are dry roasted beforehand. Keep in mind, though that you must not toast the chili flakes along with other spices since it can hurt your eyes and nose.

Ingredients

 

For Achari Masala

  • 1 tsp. Red Chili Flakes
  • ½ tsp. Nigella Seeds
  • ½ tsp.  Methi Dana or Fenugreek Seeds
  • ¾ tsp. Jeera or Cumin Seeds
  • ¾ tsp. Sanuf or Fennel Seeds
  • ½ tsp. Rai or Mustard Seeds

 

For Gobi

  • 1 pc. Cauliflower, large
  • 1 pc. Medium Onion, finely chopped
  • 1 tsp. Garlic Paste
  • 1 tsp. Ginger Paste
  • ½ cup Tomato Puree
  • ½ tbsp. Curd or Yogurt, beaten
  • ½ tsp. Cumin Seeds
  • ½ tsp. Nigella Seeds
  • ½ tsp. Mustard Seeds
  • ¼ tsp. Haldi
  • 1/8 tsp. Cinnamon Powder
  • 2 tbsps. Oil or Mustard Oil
  • 2 tbsps. Chopped Cilantro Leaves for garnishing
  • 1 tbsp. Achari Masala (mentioned above)

 

Directions

  1. Prepare the Achari Masala by toasting ALL of the spices except the red chili flakes in a medium-heated pan. Shake and heat until you smell a warm, nutty aroma. Allow to cool down before adding the red chili flakes and grinding it.

 

  1. Wash, pat dry and cut the cauliflower into big florets. Heat oil in a pan, add the cauliflower and toast it until the florets are half-cooked, crisp and golden brown. Remove the half-cooked cauliflower from pan and set it aside.

 

  1. In the same pan, add cumin and mustard seeds in heated oil. As it sizzles, mix in ginger and garlic paste, sauté for a few seconds and add the chopped onions. Cook until the onions become translucent before adding the tomato puree, curd, salt, haldi and cinnamon powder then mix it well.

 

  1. Add pan-cooked gobhi and mix well until the ingredients are well-blended. Add some water, cover and cook until the florets are soft and tender. Add achari masala, mix well and sprinkle chopped cilantro leaves on top. Your Achari Gobhi is now ready to serve.
